

Schärdinger wine cheese is a soft cheese with a natural rind that matures in wine yeast lees, lending it its fruity, slightly acidic flavour and dark rind. Wine cheese is hand made and rubbed with wine yeast multiple times during its ripening period. This gives it its characteristic dark rind, which the milk mould covers with a layer of fluff as the cheese ages. The rind is the mark of quality of this fine cheese and most certainly should be eaten along with it. *Lees are deposits that form in wine vats during fermentation. Wine cheese is available in 1.3 kg wheels from the delicatessen counter and in smaller 250 g wheels in the Schärdinger Affineur assortment.
