

Schärdinger Geheimratskäse is a semi-hard cheese from Garsten in Upper Austria. It is known for its characteristic spherical shape and the traditional red wax that covers it. This wax also gave the cheese its name, taken from the red wax used in seals on official correspondence written by imperial officials in the former Austro-Hungarian monarchy. This cheese is covered with red paraffin to protect it from becoming dry. Schärdinger Geheimratskäse is a light yellow cheese with small, round eyes scattered throughout, with a smooth texture and a typically mild, occasionally slightly sour taste. Geheimratskäse is available in 250 g wheels on the self-service dairy shelf.
