

Originally from Mondsee, this cheese has been produced since the early 19th century. Schärdinger Mondsee is manufactured at the Voitsberg dairy in Styria using pasteurised cow´s milk. The small blocks of cheese are treated with salt water and red cultures, giving them a bold, piquant taste. Once they have ripened, the small blocks have a yellow to red-orange rind and a smooth texture with narrow eyes. Its typically piquant, slightly acidic taste makes it a popular choice for cheese salads, Brett´ljausen (plates of cold cuts with bread) and hearty, rustic cheese platters.
