Its smooth and creamy texture ranges from white to light-yellow and is pocked with irregular eyes. It features a blue-green veining throughout with individual clusters of mould. √Ėsterblu has a distinctive strong and piquant flavour, and a combination of fine white and blue mould gives the cheese its unique character. Best enjoyed with a glass of sweet wine.
