Schärdinger Monte Nero is an Austrian semi-hard cheese and is produced at the Voitsberg dairy in Styria. Monte Nero is similar to Spanish Pyrenees cheese in its fat content and its slightly sour and creamy taste. Monte Nero is made using cream from pasteurised milk and after a brief drying period is covered with a black plastic covering, in which the cheese matures for a minimum of six weeks and that protects it from becoming dry. Monte Nero is a velvety, creamy fresh, lightly sour semi-hard cheese. It is available from the blocks at the delicatessen counter.
