This cheese variety was first produced around 1820 in the town of Tilsit in East Prussia. It has been at home in Austria for over 100 years now. Schärdinger Bergtilsiter is manufactured at the Voitsberg dairy in Styria. Schärdinger Bergtilsiter is made from pasteurised milk and its surface is treated in a process called "smearing" in tempered maturing cellars. "Smearing" involves repeatedly brushing the cheese with salt water and red cultures. This creates the orange-brown rind and bold, spicy flavour.
