Kärntner Rahmlaib / Kärntner cheese wheel
 
Rahmlaib from Schärdinger is manufactured according to old Carinthian recipes. Typical features of Kärntner include its many, irregular narrow holes or eyes. The texture is firm, soft and smooth and it has a gold-yellow colour. Red culture ripening gives it its slightly tangy to piquant and spicy flavour. Its relatively high fat content gives Kärntner a creamy, melting consistency. With its red cultured natural rind, it is especially well-suited for snacking and rustic cheese boards. The cheese wheel melts very well and is also suitable for using as a melted cheese topping and for making cheese sauces. Kärntner Rahmlaib is available from approx. 4 kg blocks from the delicatessen counter.
